Lemon-Lime Poppy Seed Muffins

Yield: 24 mini muffins

Ingredients:

2 cups all purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon poppy seeds

2 large eggs

1 cup sour cream

½ cup sugar

2 tablespoons butter, melted

2 tablespoons vegetable oil

1 teaspoon vanilla extract

½ teaspoon lemon extract

1 tablespoon grated lime zest

 

Directions:

Preheat oven to 400F. Grease a mini-muffin tin or line with paper liners.

 

In a large bowl, whisk together the flour, baking powder, baking soda, salt and poppyseeds.

 

In a separate bowl whisk together the remaining ingredients.

 

Add the wet ingredients to the dry ingredients and mix together with a few light strokes, just to combine.

 

Fill each cup about ¾ full.

 

Bake for 9-10 minutes, or until a toothpick inserted in the muffins comes out clean.
