Yummy Fall Squash Soup
Ingredients
- 1 squash, peeled and cubed
- 2 small onions
- 2 potato, yam or any other of your favourite tuber
- 1 carrot, diced
- 1 piece cellery, diced
- 4 cups vegetable stock
- Small piece ginger, crushed or finely chopped
- 4 cloves garlic, crushed
- pinch of dill
- 1 cup milk (optional)
- salt and pepper as desired

Procedure
Step 1: In a large sauce pan saute onions, garlic, and ginger for 5 minutes. Add carrots and celery, saute for another 2-3 miutes. Add squash, potatoes, milk and stock bring to a boil. Season with salt, pepper and a pinch of dill.
Step 2: Puree squash, potatoes and milk in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil
