Pear Honey
8 c. peeled, cored & finely chopped pears
1 c. unsweetened pineapple juice
4 c. white sugar
4 c. brown sugar
Place chopped pears into a large pot & pour pineapple juice over them to
prevent them from browning. Stir in sugars & bring to boil over medium-high
heat; stir frequently to prevent scorching. When pears are at full boil, reduce
heat to medium & cook 'til mixture is color & texture of honey,
stirring occasionally – the longer you cook it, the thicker it gets. Cooking
time is about 5-7 hours. Ladle into hot sterile jars, filling to within
1/2" of top. Wipe rims with clean damp cloth & seal jars with lids
& rings. Process in boiling water canner for 15 min
