(from a poster on Weight Watchers)
1 cup brown rice (I use the Mahatma brand)
2-1/2 cups
water or FF broth
1/2 teaspoon salt
1. Adjust oven rack
to middle position; heat oven to 375 degrees. Spread rice into a
1-1/2 quart baking dish.
2. Bring water or broth to boil,
then immediately stir in salt and pour liquid over rice. Cover baking
dish tightly with doubled layer of foil.
(I've found that the results are still good if you only use one layer of foil, or if you just use a dish with a lid)
3. Bake rice 1 hour, until
tender.
4. Remove baking dish from oven and uncover. Fluff
rice with dinner fork, then re-cover dish with foil and let rice
stand 5-10 minutes.
