Basic Muffins (Once again from The Everything Quick Meals Cookbook)
2 cups flour
¼ cup sugar
1 tbl baking powder
½ tsp salt
1 large egg
1 cup milk
1/3 cup veggie oil
Preheat oven to 400 degrees. Grease a muffin tin or line with paper cups.
Mix dry ingredients together then add in the wet ones. Combine them just until moist (batter will remain slightly lumpy). Fill muffin cups 2/3 full. Bake for 20 minutes.
Variations: add in blueberries, raspberries, strawberries, bananas, oatmeal, apples, pumpkin (1 can + ¾ cup sugar), chocolate chips, cocoa, coffee & hot chocolate mix, etc. The possibilities are endless!
