Basic Pancakes (From The Everything Quick Meals Cookbook)


1 cup flour ¼ tsp salt

1 tbl sugar (granulated or brown) 1 egg

2 ½ tsp baking powder 1 cup milk

2 tbl cooking oil


Combine all ingredients starting with the dry then adding wet ones. Batter will be a little lumpy. In a med-high heat griddle/skillet, cook ¼ cup pancakes for about 2-3 minutes each side.


I usually add one of the following: ½ can pumpkin & ¼ cup sugar, blueberries (frozen or fresh), chocolate chips, mashed banana, diced strawberries, or chopped apples.
