Lily's First Birthday Pie

Meat from 3 Young Coconuts
4 Bananas (3 for the pie and one for the "crust")
2 Tblsp Agave Nectar
1 Cup Fruit (we used strawberries)
1/3 Cup Virgin Coconut Oil (melted)

First, boil some water and pour some into a bowl.  Put 1/3 cup coconut oil into a cup.  Set that cup into the the bowl of boiled water so it melts. 

Poke around in the bottom of the young coconuts with a knife until you find a hole.  Dig it out a bit and drain the coconut water into a strainer over a bowl.  Then take the coconuts to your driveway and smash them repeatedly until they break open.  Scoop out the meat and wash any bits of shell off that might be stuck to the meat. 

Blend all ingredients together, except the melted coconut oil.  Try not to add water.  Once smooth pour in the melted coconut oil and continue blending until evenly mixed. 

Pour into pie plate lined with chopped bananas and place in refrigerator for a couple of hours to allow coconut oil to harden and set. 

Serve chilled.
