Chicken and Bean Burritos
Makes 6 servings.

1 pound boneless, skinless chicken breasts
1 package burrito seasoning
1 cup water
1 - 15 ounce can black beans, rinsed and drained
6 (8 inch) flour tortillas

Toppings:
shredded cheese, optional
chopped tomato, optional
low fat sour cream, optional

  1. Boil chicken in medium pot until cooked all the way through.
  2. Drain chicken and shred.
  3. Lightly brown chicken in large skillet.
  4. Stir in burrito seasoning mix, water, black beans.
  5. Simmer 10 minutes.
  6. Warm tortillas, according to package directions.
  7. Spoon chicken mixture down the center of tortilla.
  8. Fold in both sides of tortilla, and then roll into a secure wrap.
  9. Repeat with remaining chicken mixture and tortillas.

To serve immediately: Top with cheese, tomato and sour cream.

To freeze:Wrap burritos tightly in aluminum foil place in large freeze bag and freeze.
To heat: Thaw burritos thoroughly.  Bake at 350 degrees for 10 minutes, in aluminum foil, unwrap and bake an additional 5 minutes. Top with cheese, tomato and sour cream..
