Chicken and Bean BurritosMakes 6 servings.
1 pound boneless, skinless chicken breasts
1 package burrito seasoning
1 cup water
1 - 15 ounce can black beans, rinsed and drained
6 (8 inch) flour tortillas
Toppings:
shredded cheese, optional
chopped tomato, optional
low fat sour cream, optional
- Boil chicken in medium pot until cooked all the way through.
- Drain chicken and shred.
- Lightly brown chicken in large skillet.
- Stir in burrito seasoning mix, water, black beans.
- Simmer 10 minutes.
- Warm tortillas, according to package directions.
- Spoon chicken mixture down the center of tortilla.
- Fold in both sides of tortilla, and then roll into a secure wrap.
- Repeat with remaining chicken mixture and tortillas.
To serve immediately: Top with cheese, tomato and sour cream.
To freeze:Wrap burritos tightly in aluminum foil place in large freeze bag and freeze.
To heat: Thaw burritos thoroughly. Bake at 350 degrees for 10 minutes, in aluminum foil, unwrap and bake an additional 5 minutes. Top with cheese, tomato and sour cream..
